Instructions:Preheat your oven to 325°F. Lightly butter a loaf pan.In a small saucepan, melt 3 TBLS butter with 1/3 cup brown sugar over medium heat until bubbly. Pour this mixture into the bottom of the prepared loaf pan — it creates a soft, caramel-like layer as it bakes.In a small bowl, stir the red wine vinegar into the milk and set aside.In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add the eggs and mix well. Stir in the vanilla and butter until everything is combined.Add the flour, sugar, baking soda, and salt. Gently mix until just blended.Pour in the milk mixture and stir until smooth. If you’d like, you can fold in chocolate chips or chopped walnuts.Pour the batter into the prepared pan and bake for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.Let the bread cool in the pan for a few minutes. Run a knife gently around the edges, then carefully invert onto a cooling rack. Lift off the pan and allow the loaf to cool completely.Optional Salted Caramel ToppingIf you prefer, skip the butter and brown sugar layer in the pan and instead drizzle this salted caramel topping over the cooled loaf.In a small saucepan, bring ¼ cup brown sugar and 2 TBLS butter to a boil. Remove from heat and stir in 2 TBLS heavy cream. Add 1/3 cup powdered sugar and ¼ to ½ tsp salt, stirring until smooth.Spoon or drizzle over the top of the bread for a rich, sweet finish.
